7. Fruit Cake

Ingredients

100 g dark raisins
100 g golden raisins
80 g sweet tomato chopped
100 g dried banana chopped
100 g prunes
50 g cranberries
50 g peel oranges chopped
100 g green and red cherries
100 g rum
100 g all purpose syrup
200 g all purpose flour
1/2 teaspoons baking powder
1/2 teaspoons salt
160 g salted butter, Golden Churn brand
160 g brown sugar
3 eggs
greased baking pan (7 inch)  line bottom with wax paper and coat with dust flour
Rum for spraying on cake
Jam for glazing
Prunes, apricots, figs, cranberries, green and red cherries, and crispy pecans for decorating

Directions

  1. Mix dried fruits, rum and syrup in bowl, stand for overnight.
  2. Sift together flour, baking powder and salt; set aside.
  3. Beat the butter with brown sugar in the mixer using a flat beater on medium speed for 10 minutes. Change the speed to low, add egg, flour 
    mixed and fruits rum mixed, beat until combine.                        
  4. Pour batter in prepared pan and bake at 300-330oF for 50 to 60 minutes, or until cake is brown.
  5. Remove from the oven, spray with rum and leave to cool. Glaze and decorate cake with jam and dried fruit as desire.
